Thursday night, Michael flat out requested lots of fried goodness. So Saturday night, I obliged. I made him fried pickles, fried chicken, and french fries.
The fried pickles turned out delicious... So I thought I'd share the recipe.
What you'll need
4 TB cornstarch
4 TB corn meal
1 TB Tony Cachere's seasoning
1 tp Garlic powder
2 eggs
1/4 cup milk
Dill pickles ( I used hamburger pickle slices)
Oil for frying (whatever you like... canola, vegetable, olive oil, peanut oil)--enough to make it 2 inches deep in your pan
Frying pan/cast iron skillet/deep fryer
What you'll do
Mix dry ingredients thoroughly in a medium size bowl.
Mix eggs and milk together (basically scrambling the eggs) until they are completely mixed.
Drain juice from pickle slices.
Heat oil in pan to medium high heat (too hot will fry them...)
Dunk pickle slices in egg/milk mixture. Afterwards, dunk pickle slices into dry mixture. Coat completely.
Take pickle slices from dry mixture bowl, and put them in the oil (seperately. if you put them in as chunks, they fry as chunks). Cook till they are golden brown.
Remove from oil and drain oil off.
Repeat until all pickles are cooked.
Serve warm.
